A talented chef creating incredible, award winning dishes is a treat in itself, but when the chef has the verve, personality, and passion that makes him a pleasure to spend some time with - that's an added bonus. Chef Peter Birk is all I described and more.

He was lured away from the Ritz Carlton Hotel in Kansas City to become Executive Chef at Ray's Boathouse. He's locally famous for his devotion to promoting local Northwest seafood and produce. Many locals can catch Peter at the Ballard Sunday Farmers Market, perusing the fresh catches and produce of the day. Ray's Boathouse management felt Chef Peter's ability to take classically based preparations and offer a modern twist was a perfect match with the type of menu Ray's wanted to present.

Pictured here, Chef Peter stands on the staircase holding a prized salmon, caught the evening before, and flown in fresh that morning to the restaurant. After snapping a few shots, I joked with Peter. "Just 20 or 30 more images - and we'll be done!", I said. Luckily, he still allowed me to taste a thing or two on the menu.
